APPLE CRANBERRY CRUMB PIE Submitted by: Christopher Beggs **Ingredients** Pie Ingredients 3 medium sized Granny Smith apples – peeled, cored, thinly sliced 6 ounces (approximately) fresh cranberries 1 cup sugar ¼ cup flour ½ teaspoon apple pie spice 1 – 9 inch pie crust (store bought or make your own) Topping Ingredients 2 tablespoons cold butter ¼ cup flour 2 tablespoons brown sugar **Directions** Preheat oven to 425 degrees. If using a store bought pie shell, follow their directions for defrosting/warming pie crust. Once crust is at room temperature, roll into your pie plate, crimping the edges. Mix the “pie” dry ingredients well and sprinkle about 4 - 5 tablespoons of this mixture onto the bottom of pie crust (this will help to absorb some of the fruit juices so that the crust doesn’t get too soggy). In a bowl, combine the fruit. Gently mix in the rest of the dry ingredients into the fruit. Pour mixture into pie crust. Mix the “topping” ingredients well with a fork or pastry blender. Crumble this mixture on top of the fruit mixture. Bake pie at 425 degrees for 10 minutes. Reduce heat to 350 and bake until the fruit is fork tender, the juices are bubbly, and the crust edges are golden brown (depending upon your oven, about 50 minutes). Serve warm or cooled with a scoop of vanilla ice cream. Enjoy!
