MARINATED CHEESE Submitted by: Amy Beggs **Ingredients** ½ cup Olive Oil ½ cup White Wine Vinegar (or white distilled vinegar and add a splash of white wine) 3 T chopped fresh parsley 3 T minced green onions 1 tsp sugar ¾ tsp dried basil ½ tsp salt ½ tsp ground pepper 3 cloves garlic, minced 1 (2-oz) jar diced pimiento, drained 1 (8-oz) block sharp cheddar cheese, chilled 1 (8-oz) package cream cheese, chilled Garnish: fresh parsley sprigs **Directions** Combine first 10 ingredients in a jar or container with a lid. Cover and shake vigorously. Set marinade mixture aside. Cut cheddar block in half lengthwise. Cut cross-wise into ¼ inch thick slices. Set aside. Repeat procedure with cream cheese. Arrange cheese slices alternating cheddar and cream cheese in a shallow baking dish to form a row of cheddar/cream cheese/cheddar/cream cheese, etc. Pour marinade over the cheese and refrigerate for at least 8 hours. Transfers cheese slices to a serving platter and arrange in the same alternating pattern. Spoon the marinade over the cheese slices and garnish with the parsley sprigs if desired. Serve with assorted crackers.
